How to pick a good one
Should yield to gentle pressure like a ripe peach. Firm kiwifruit is sour and will ripen on the counter within a few days. The fuzzy skin should be unbroken, with no soft or wet patches, and size makes no difference to flavour.

For neat slices, do that first and then cut across. A firm kiwi grates surprisingly well for a marinade, and the enzyme that makes it a good tenderiser works within about twenty minutes.

The skin is edible and holds most of the fibre, though most people prefer to halve and scoop. Like pineapple, kiwifruit contains an enzyme that stops gelatine setting and will turn a dairy dish bitter if it sits too long.
